Hello fellow adventurers! Buckle up as we embark on a whirlwind journey from Houston, TX, with my United pilot hubby on his 4-day trip, indulging in first-class extravagance all the way to the stunning shores of LAX and the lush landscapes of Lihue. Get ready for a travel experience that’s nothing short of fabulous!
Day 1: Departure from Houston to LAX
Our adventure began with a seamless takeoff from Houston’s bustling George Bush Intercontinental Airport (IAH). As the wife of a commercial pilot, I’ve come to appreciate the beauty of aviation, especially when you’re seated in the lap of luxury. First class was an absolute dream – spacious seats, attentive service, and gourmet cuisine. It’s the only way to travel!

LAX – The City of Angels
After landing at Los Angeles International Airport (LAX), we headed straight for the Royal Sonesta in Redondo Beach. This beachfront haven oozes sophistication, and our ocean-view room set the perfect tone for our stay. The waves crashing against the shore were our lullaby.


Hermosa Beach – A Slice of Paradise
We hopped into an Uber to Hermosa Beach, a charming coastal town. The views were breathtaking, and the cooler weather was a welcome change from the Texas heat. For happy hour, we followed a friend’s recommendation to Palmilla Cocina Y Tequila, and boy, were we glad we did. Those margaritas were absolutely mind-blowing – the perfect start to our California adventure!



Hennessy’s Tavern – Rooftop Delight
Continuing our happy hour extravaganza, we headed to Hennessy’s Tavern for light bites and were delighted to discover their rooftop oasis. The Nashville chicken bites were a spicy sensation, and the views were simply captivating. We could get used to this!


Bluewater – A Seafood Delight
Dinner took us to Bluewater for the sunset, where we relished the charred octopus and edamame appetizers. The ocean-fresh flavors danced on our taste buds, and it was a perfect ending to our day in LAX.

Day 2: Off to Lihue, Kauai
We said goodbye to sunny California and boarded our flight to Lihue, Kauai. First class, baby! The Royal Sonesta Kauai Resort in Lihue awaited us, promising a slice of paradise.

Duke’s – A Mai Tai to Remember
No trip to Kauai is complete without indulging in a Mai Tai at Duke’s. With its beachfront location and tropical vibes, we savored this famous cocktail while watching the sun dip below the horizon.


Scorpacciatta Lihue – A Culinary Adventure
For dinner, we explored Scorpacciatta Lihue, where the roasted artichoke and gourmet pizzas stole the show. The mushroom and hot salami pizzas were out of this world, and we dined like royalty.

Lihue’s Rich History and Culinary Delights
Lihue, Kauai, offers more than just stunning beaches. It’s steeped in history and culture. Don’t miss a visit to Kilohana Plantation, where you can learn about the island’s sugar plantation history and indulge in some delicious Hawaiian rum tastings.
Foodie Paradise
As a food lover and self-proclaimed foodie, I couldn’t resist exploring Lihue’s culinary scene. Kauai Pasta, with its homemade pastas and fresh seafood, was a standout experience. And if you’re a fan of food trucks, don’t miss out on Mark’s Place for local Hawaiian comfort food.
Moco Loco: A Culinary Passion in Lihue
When it comes to Lihue, Kauai, there’s a special dish that has captured not only our taste buds but the hearts of many – Loco Moco.

The History of Loco Moco
Loco Moco is a beloved Hawaiian comfort food that has a rich history dating back to the 1940s. Its origin story is as charming as it is delicious. It is said to have been created in Hilo, on the Big Island of Hawaii, at a place called the Lincoln Grill. It was initially concocted as an affordable yet hearty meal for local surfers.
What is Loco Moco?
So, what exactly is Loco Moco? At its core, it’s a simple yet indulgent dish featuring a few key components:
Hamburger Patty: A juicy hamburger patty, often seasoned to perfection, serves as the heart of Loco Moco.
Rice: This mouthwatering patty is placed on a bed of steamed white rice, which provides the perfect canvas for the flavors to unfold.
Fried Egg: A fried egg is artfully placed on top of the patty, its runny yolk waiting to mingle with the other ingredients.
Gravy: And here’s where the magic happens – a generous ladle of rich, savory gravy is drizzled over the entire ensemble, adding depth and flavor to every bite.

Hubby’s layover life has its perks. While he’s at work, I get to explore the island’s lush landscapes, go hiking in Waimea Canyon, or simply relax on the pristine beaches. Kauai offers endless opportunities for adventure and relaxation.
